Soup season is the best. I love a hearty dinner full of fresh ingredients that comes together quickly, reheats like a dream (Lunch is ready!) and freezes beautifully for another dinner altogether.

Our newest family favorite is Sausage, Kale and Bean Soup, a simple recipe that kids (and husbands) love! 

We get our sausage (and potatoes and kale) from a local farm where everything is pasture-raised and organically grown. I used to think this would be too expensive to do but the prices are really on par with the grocery store. It’s just much better quality. Plus our dollars are going to local small businesses, which I love every time.

That’s what my daughter asked over dinner and I’m so happy to say: YES! There’s so much nutrition packed in this soup. Kale is a powerhouse. Beans are key contributors to good health. And potatoes have more potassium than bananas!

How to make Sausage, Kale and Bean Soup

You can mix and match to make this soup your own but here is the recipe for the one I’ll make a dozen times again before spring. Because it’s SO GOOD.

Sausage, Kale and Bean Soup: The Super Simple Soup Kids Love

Ingredients

Scale

24 strips of bacon, diced

2 large onions, diced

2 cloves of garlic, minced

1 pound Italian sausage, mild

2 pounds yellow, white or red potatoes

2 tablespoons apple cider vinegar

6 cups chicken stock

1 cup whole milk

112 ounce can of beans (kidney, white, or pinto), rinsed

34 cups of kale, chopped

1 teaspoon salt

1/2 teaspoon pepper

1 teaspoon dried oregano

Instructions

In a large stock pot or Dutch oven, sauté bacon over medium heat. Add diced onions and garlic, then stir. Cook about 2-3 minutes. Add sausage, breaking up pieces with a wooden spoon. Stir and cook until the onions are soft and the sausage is cooked through.

Add potatoes and stir. Pour apple cider vinegar into the pot. Cook for 2 minutes.

Add milk, chicken stock, rinsed beans, kale plus salt, pepper and oregano. Stir and simmer for 25 minutes.

Taste for salt and pepper and add a little more as needed.
